Easy Chia Seed Pudding
Hi everyone! And happy Thursday! Yesterday I made some chia seed pudding so that I could have it for breakfast today. It came out sooo good! And it’s dairy free!
- 2 cups coconut milk
- 1 tablespoon pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup chia seeds
In a medium bowl, slowly whisk together the coconut milk, syrup, and vanilla. After that is mixed, slowly add in the chia seeds while still whisking. Let the mixture sit for a few minutes, then slowly whisk again. Repeat this process for 10-15 minutes.
Put the bowl in the refrigerator for at least 3 hours to allow the mixture to thicken up a bit. After a few hours, I added it to 3 small mason jars and put them back in the fridge, and this morning it was perfect! I hope you guys enjoy this easy, healthy recipe!
