Happy Monday! Yesterday for breakfast, I tried out a super easy (and healthy) pancake recipe. It literally took about 10 minutes to make. And the best part…it only requires 2 ingredients! Well, 3 if you count the syrup haha. These pancakes are dairy free and grain free. I will say they are much thinner than your regular pancakes and cook much faster, so just be sure and watch them while they are on the griddle.
- Mash a ripe banana in a small bowl. It works much better if the banana is browning a bit…that means it’s softer. Mash until all the chunks are out and the banana is super smooth.
- Add 2 eggs to the banana and whisk. You can even put the mix into a small blender like a NutriBullet to make it even smoother and give it an even consistency. I didn’t do that for these because I didn’t want to wash another dish (haha), and they came out fine.
- Spray your griddle or pan with some baking spray (I used coconut oil spray). Scoop out the mix with a large spoon and make them like regular pancakes!
- Add some pure syrup on top and enjoy!
