Hello, friends! A couple of nights ago, I made this super easy crock-pot dinner that quickly turned into shredded chicken tacos haha. It is the simplest recipe and it’s soo good. All you need is:
- 3 boneless, skinless chicken breasts
- 8oz of salsa
- 1/2 packet of taco seasoning (or more if you want a little more flavor)
**If you’re making this for a get-together or small party, then I would double the recipe.
Throw all of the ingredients in the crock-pot and mix it up a bit so the flavors of the salsa and taco seasoning combine. Cook on high for 4 hours. After 4 hours, you should be able to shred the chicken easily with two forks. I usually let it cook a little bit longer (maybe 15 min or so) after I shred it all up.
Then serve! You can use this shredded chicken in tacos, on top of a salad, or in a lettuce wrap. We chose tacos, of course. We used the grain-free tortillas that I talked about in a previous post. I will link that here. Then we just added some shredded lettuce, tomato, cilantro, and guacamole. They were delicious!
